How to use your Turbo Moka

Exactly like the moka you already know: water in the boiler, coffee in the filter, screw it together, low to medium flame.

The only difference is speed. The turbine base catches the heat a flat base lets escape, so the coffee comes up sooner. Keep the flame small enough to stay under the base and don't walk away.

Fill the boiler

Cold water up to just below the safety valve. Never above it.

Fill the funnel

Screw and heat

Tighten firmly by the handle, then a low to medium flame that stays within the base.

Pour when it gurgles

When the flow turns pale and starts to gurgle, take it off the heat and serve straight away.

Which stoves does it work on?

  • Gas, the flame should never spread wider than the base.
  • Electric and ceramic, medium setting.
  • Induction, with the Turbo Moka adapter disk.

For the best cup

  • Grind for moka: finer than filter, coarser than espresso.
  • Low flame gives a rounder coffee. High flame burns it.
  • Take it off the heat as soon as it gurgles.
  • Stir the coffee in the top chamber before pouring, so the first and last drops mix.
  • First use: brew once and throw that coffee away.

Cleaning

Rinse with warm water and dry well after every use. No soap, no dishwasher, as with any aluminium moka: detergent strips the oils that give the coffee its taste.

Leave the three parts apart until dry, so no moisture stays trapped inside.

Maintenance

Replace the gasket and the filter plate when the seal hardens or the coffee starts coming up slowly, roughly once a year with daily use. Check that the safety valve is never blocked.
